The name “Prästost” (priest cheese) originates from the practice of giving the finest cheeses to the local priest. Made at the Kalmar dairy using fresh milk from Öland and Småland, this cheese is characterized by its creamy texture, a slightly tart touch that balances the sweet and salty elements, and a distinctive crust. It is closely related to Svecia cheese and contains 45-50% fat in dry matter.
